Grilled Ribeye steak and potatoes with smokey paprika rub

  • 2 beef ribeye steaks, cut 1 inch thick
    (about 12 oz ea)
  • 2 tbl vegetable oil
  • ½ teaspoon salt
  • 2 large russet potatoes, cut lengthwise into 8 wedges each
  • Salt
  • 1 tbl minced green onions
  • Sour Cream and Onion Sauce (recipe follows) (optional)

Seasoning:

  • 2 tbl smoked or Spanish paprika
  • 1½ teas sugar
  • 1½ teas chili powder
  • 1 teas ground black pepper
  • ½ teas ground red pepper

Sour Cream and Onion Sauce:

Combine ½ cup dairy sour cream and 2 tablespoons minced green onion. Sprinkle with smoked or Spanish paprika, as desired. Yield: ½ cup

Preparation:

  1. Combine seasoning ingredients in small bowl; remove and reserve 2 tablespoons. Press remaining seasoning evenly onto beef steaks; set aside. Combine reserved seasoning, oil and salt in large bowl. Add potatoes; toss to coat.
  2. Place steaks in center of grid over medium, ash-covered coals; arrange potatoes around steaks. Grill steaks, uncovered, 11 to 14 minutes (over medium heat on preheated gas grill, covered, 9 to 14 minutes) for medium rare to medium doneness, turning occasionally.
  3. Grill potatoes 14 to 17 minutes (over medium heat on preheated gas grill, covered, 13 to 15 minutes) or until tender, turning occasionally.
  4. Carve steaks into slices; season with salt, as desired.
  5. Sprinkle green onion over potatoes.
  6. Serve potatoes with Sour Cream and Onion Sauce for dipping, if desired.

Mario has been with Sonoma Market for thirteen years but is not often seen out of the kitchen. However, he certainly has thousands of fans - our customers - who love his food and can enjoy it for breakfast, lunch and dinner.

Mario is responsible for the delicious foods coming out of the kitchen: he plans, he preps,
he cooks. He develops recipes and ways to improve the department's work flow and systems.

Of course, Mexican food is a favorite for him as evidenced by the many choices in the hot foods and grab-and-go cases. Mario is particularly proud of the five different salsas he created.

The kitchen is always busy, but Mario thinks that Thanksgiving is the busiest!
Mario is married and Dad to four children.
